I am Dr Mauro Citi, a physician, dietitian and nutritionist, and I work privately in Genoa.
I would now like to talk briefly about “diet”.
I have often been tempted to write “On the history of the evolution of diet through the centuries”, both because diet reflects the customs of peoples and because it has evolved alongside the dominant currents of thought in medicine and society.
The ease of transporting previously unavailable foods from one country to another, improved food preservation, increased prosperity, the spread of packaged snacks, fast-food outlets, sandwich bars and supermarkets have profoundly changed eating habits in the Western world.
So how can we change this situation?
I believe the answer lies in nutrition education.
